Garlic
The following recipes show you why Garlic is so great to dehydrate!
With an Ezidri dehydrator you can create your own dried garlic cloves, powder, salt and more in no time at all! Dried garlic makes a flavoursome addition when used in a variety of recipes like soups, casseroles, sauces & more! It's also great as a medicinal tool. Garlic is believed to aid digestion, is a natural antiseptic & contains the vitamins A, B & C as well as sulphur, magnesium, iron & calcium. It is handy to keep some dried garlic in a glass jar at all times - you will be surprised at how often you'll use it!

HOW TO DRY GARLIC
​
When drying garlic, don't dry anything else with it - the smell is very strong and will make everything else taste like it!
To dry the garlic whole, divide your garlic bulbs into cloves, peel & cut the root off. Remove the growing tip in the garlic, to leave just the garlic flesh. The garlic tip will cause the garlic to have a bitter taste when dried.
Place the garlic cloves evenly on the trays of your Ezidri dehydrator & dehydrate at 55 deg C (Snackmaker - Medium) for 12-24 hours, until it is very dry.
To create Garlic Powder, allow the cloves to cool & place them in a food processor to make a fine powder. To turn this into Garlic Salt, mix 1 part Garlic Powder with 3 parts Salt.
To rehydrate Garlic cloves, place them in warm water for 2-3 hours, or until soft and then use in cooking as normal
To create dehydrated granules, peel garlic & cut each clove in half. Put in a blender & mix for 6 seconds in on/off mode. Pieces need to be cut small, but not mashed.
Spread on a Solid Sheet and place in your Ezidri dehydrator. Dry for 6 hours at 35 deg C (Snackmaker - Low). Scrape the garlic off the sheet, crumble it & dry for one more hour.M/p>
When finished, if not small enough place in a blender for 3 seconds. Or grind some in a nut or coffee mill. Place granules in a sealed container & store in a dry, dark, cool place.

GARLIC COLD REMEDY
​
Garlic helps to ward off colds & flu and has many more uses. Whenever you start to get a cold, take this remedy - it really works!

Ingredients
1/2 glass orange juice
1 tsp ground dehydrated garlic
1 tsp sugar
2-3 Tbsp brandy or other spirit
Method
Mix orange juice, garlic & sugar. Drink quickly & have the brandy to follow in one swig. Take it just before going to bed - it's magic!

GARLIC SAUCE (AIOLI)
​
This is an easy version of the famous aioli & tastes just as good as the one that originated in provincial France.

Ingredients
1 cup natural yoghurt
2 Tbsp mayonnaise
3 tsp ground dehydrated garlic
1 Tbsp dried dill
2 tsp lemon juice
1/4 tsp sugar
1/4 tsp salt
freshly ground black pepper, to taste
Method
Mix yoghurt & mayonnaise together. Add remaining ingredients, stir to blend well. Regrigerate overnight before using.
Serve with boiled potatoes, fish or vegetables & enjoy!

MARINATED DRIED TOMATOES
​
Ingredients
1 cup dehydrated tomato slices, or pieces
2 tsp dehydrated garlic granules
1 tsp basil
1 tsp sugar
olive oil
Method
Place tomato slices/pieces & garlic in a bowl, barely cover with boiling water for 1 minute, drain. Put back in dehydrator, including garlic, for 1 hour. Use the drained liquid in soup or gravy.
Place tomato slices/pieces in a glass jar, cover with basil, sugar & barely cover with olive oil. Season to taste. For something different, add a pinch of chilli powder.
If the tomato slices are not soft enough for your taste, place in a microwave dish, microwave on high for one minute & transfer to a glass jar.
Serve on a platter with other gourmet delights & enjoy!
